The New Mexico Green Chile Cheeseburger is a bold, flavorful twist on the classic American burger, combining a juicy beef patty with the unmistakable heat and smokiness of roasted Hatch green chiles. Melted cheese—often American or cheddar—blankets the burger, while the roasted chiles add a slightly spicy, earthy flavor that defines New Mexican cuisine. Served on a toasted bun and often topped with lettuce, tomato, onion, and sometimes a little mayo or mustard, this burger perfectly balances savory beef, creamy cheese, and the bright kick of green chile. It’s messy, satisfying, and packed with Southwestern character.

The burger can be found everywhere across the state—from roadside diners to local festivals—and it’s often made with freshly roasted chiles during harvest season, when the aroma of roasting peppers fills the air throughout New Mexico.

The Green Chile Cheeseburger reflects New Mexico’s deep connection to its most famous ingredient: Hatch green chiles. New Mexico Green Chile Cheeseburger Recipe

Ingredients

  • 1 lb ground beef (80/20 preferred)
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 slices American or cheddar cheese
  • 4 hamburger buns, toasted
  • 4–8 roasted Hatch green chiles, peeled, seeded, and chopped
  • 4 lettuce leaves
  • 4 tomato slices
  • ¼ cup sliced onion
  • Mayonnaise and/or mustard (optional)

Instructions

  1. Prepare the patties:
    Divide the ground beef into 4 equal portions and gently form into patties slightly larger than your buns. Season both sides with salt and pepper.
  2. Cook the burgers:
    Heat a skillet or grill over medium-high heat. Cook the patties for about 3–4 minutes per side, or until they reach your desired doneness.
  3. Add the cheese and chiles:
    During the last minute of cooking, top each patty with roasted green chiles and a slice of cheese. Cover briefly so the cheese melts.
  4. Toast the buns:
    Lightly toast the buns on the grill or in a pan until golden.
  5. Assemble the burgers:
    Spread mayo or mustard on the buns if desired. Add lettuce, the chile-topped cheeseburger patty, tomato, and onion.
  6. Serve:
    Serve immediately with fries, chips, or a side of roasted potatoes for the full Southwestern experience.
