Texas Roadhouse shares easy recipe for Lent
Lent is almost here.
BLACKENED SALMON
INGREDIENTS:
Boneless, skinless salmon filets
Clarified butter
Cajun seasoning (Paul Prudhomme brand suggested)
Melted butter and lemons
DIRECTIONS:
Place a large cast-iron skillet on a burner set to its highest setting. If you arecooking indoors, make sure you have a well-ventilated kitchen with a hood overyour stove. If not, we recommend cooking outside.2.
Coat each salmon filet with Cajun seasoning on both sides. Use approximately 1teaspoon per side.3.
Place a thin coating of clarified butter in your preheated skillet. Once the butter ishot and begins to smoke, carefully place the salmon filets into the pan. Use a pairof tongs and avoid splashing the hot oil.4.
Cook the filets approximately 2-3 minutes on each side. Fish should feel firm to thetouch when it is done.5.
Remove to a plate, serve with a little melted butter poured on top and a lemonwedge.
