In some Texas BBQ circles, adding sauce to expertly smoked meats has been—and will always be—totally taboo. Sure, great BBQ should be tender, juicy, and tasty enough to be enjoyed in its purest form, but a deliciously crafted barbecue sauce can genuinely take something already perfect to new heights of flavorful pleasures (like ranch dressing on a slice of pizza).

Pecan Lodge BBQ Sauce

Yield: 6-8 cups of sauce


  • 5 cups diced onions
  • 18 cloves garlic
  • 8 guajillo chiles
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2½ cups ketchup
  • 4 tablespoons mustard
  • 1¼ cups Worcestershire sauce
  • 10 tablespoons apple cider vinegar
  • 2 tablespoons soy sauce
  • 10 tablespoons lemon juice
  • 12 tablespoons brown sugar
  • 2 chipotle peppers

1. Remove stems and seeds from guajillo peppers and soak chiles in hot water for about 30-45 minutes.
2. Heat oil over medium heat and add onion and garlic. Saute until translucent.
3. Add ketchup and chiles, and saute for 4 minutes.
4. Add remaining ingredients and simmer gently for 30 minutes.
5. Remove from heat, cool, puree, and add water to thin.
