Keto Burger Stuffed Onions
Why stuffed onions? The onion infuses the ground beef with crazy flavor. Plus, they look insanely cute.
Ingredients
- 4medium yellow onions
- Cooking spray
- 1 lb.ground beef
- Kosher salt
- Freshly ground black pepper
- 1large egg
- 1/2 tsp.Italian seasoning
- 2 oz.shredded cheddar
- 1/4 cupketo-friendly mayonnaise
- 1 Tbsp.yellow mustard
- 1 Tbsp.capers, chopped
- 1 tsp.sweet paprika
Directions
- Step 1Preheat oven to 350°. Working one at a time, cut off about ¼-inch from both ends of each onion. Peel onion. Using a melon baller or teaspoon, hollow out the inner layers of the onion (reserve for another use), leaving about ½-inch of onion all around. Coat a baking dish with cooking spray. Arrange onions in prepared dish.
- Step 2In a medium bowl, season the ground beef with salt and pepper. Add the egg and Italian seasoning and mix to combine. Press meat into the center of each onion, filling each onion halfway. Add half the cheese. Then press remaining meat on top to fill onions.
- Step 3Bake until onions are tender and beef is cooked through, tenting with foil about halfway through if tops start to darken, about 45 minutes. Top onions with remaining cheese and broil until golden.
- Step 4Meanwhile make special sauce: Combine mayonnaise, mustard, paprika, and capers and stir to combine. Season with salt and pepper, if necessary.
- Step 5Serve with special sauce.
