At TNBD, we’re continuing our series featuring a recipe from a different U.S. state every day! Today’s stop is Wyoming, home of the bold and flavorful Chugwater Chili.
Chugwater Chili is a rich, hearty bowl of Western comfort food that reflects the rugged spirit of Wyoming. Traditionally made with ground beef, tomatoes, beans, onions, and a distinctive chili seasoning blend, this dish is known for its deep flavor and gentle heat. What sets it apart is the famous Chugwater Chili Seasoning, a spice mix that combines chili powder, paprika, garlic, onion, oregano, and other spices to create a balanced, smoky flavor. Slow-simmered until thick and savory, Chugwater Chili is perfect for warming up after a long day outdoors—whether you’re coming in from ranch work, hiking, or a cold Wyoming winter. It’s a simple, satisfying meal that captures the heart of cowboy cooking: hearty, practical, and full of flavor.
The story of Chugwater Chili begins in the small town of Chugwater, Wyoming, in the early 1980s. Local rancher R.V. “Pic” Nichols developed the original chili seasoning recipe and shared it with friends and neighbors. The blend quickly became popular in the community for its perfectly balanced flavor and versatility. Eventually, Nichols partnered with local entrepreneurs to produce and sell the seasoning commercially, giving birth to the Chugwater Chili brand. What started as a small-town recipe soon gained national recognition, and today Chugwater Chili seasoning is shipped across the country.
Despite its wider popularity, Chugwater Chili remains closely tied to Wyoming’s ranching culture and small-town roots. The recipe embodies the spirit of the American West—simple ingredients, big flavor, and a tradition of sharing good food with friends and family. Whether served at community cook-offs, ranch gatherings, or family dinners, Chugwater Chili offers a true taste of Wyoming in every spoonful.
