As cooler weather rolls in, so do cozy food cravings — and few dishes feel more fall-ready than a hearty pot of chili. One classic recipe comes straight from country legend Johnny Cash, whose “Old Iron Pot Chili” originally appeared in the 1992 USO Celebrity Cookbook.
Cash, a U.S. Air Force veteran and USO performer, shared this dish as his go-to comfort meal. The recipe stands out not just for its bold, warm flavors, but also for how quick, simple, and affordable it is to prepare — ideal for busy weeknights or game-day gatherings.
USO testers praised the dish as a “one-pot wonder” that’s ready in under an hour. They noted that it’s just as tasty with ground beef or chicken if sirloin isn’t in your budget. The chili can be served immediately or simmered longer for deeper flavor, making it a strong candidate for your slow cooker, too.
For an even heartier spread, pair it with corn salsa, tortilla chips, or opt for vegetarian variations packed with beans and veggies.
Johnny Cash’s Old Iron Pot Chili Recipe
Ingredients:

1⅔ lbs sirloin steak, cubed (or substitute ground beef/chicken)

1 tbsp olive oil

1 packet store-bought chili seasoning mix

1 tsp chili con carne seasoning (e.g. Colman’s, Knorr, Old El Paso)

Chili powder and cumin to taste

1 white onion, chopped
-
14 oz can whole tomatoes

⅓ can tomato paste
-
4 oz can chopped green chiles

1 tsp each: garlic powder, onion powder, sage, thyme
-
15½ oz can kidney beans
-
Pinch of sugar

Salt and pepper to taste

Shredded cheese, for topping
Instructions:

In a large pot, heat olive oil and cook the cubed sirloin until browned.

Stir in chili seasoning, chili con carne seasoning, chili powder, and cumin. Cook for about 5 minutes.

Add the onion, tomatoes, tomato paste, green chiles, spices, beans, sugar, salt, and pepper.

Simmer for 20–25 minutes, stirring occasionally. Add water if too thick.

Taste and adjust seasoning as desired.

Serve hot, topped with shredded cheese.
