Creamy Chicken and Mushroom Stroganoff (for One)

Why it’s cozy & comforting:

  • Rich, creamy sauce

  • Quick to make in one pan

  • Warm and filling, great for cooler nights

  • Uses simple, easy-to-find ingredients

🛒 Ingredients:

  • 1 small chicken breast, cut into bite-sized pieces

  • ½ cup sliced mushrooms (fresh or canned)

  • ¼ small onion, chopped

  • ½ cup sour cream or plain Greek yogurt

  • ½ cup cooked egg noodles or pasta of choice

  • 1 tablespoon butter or oil

  • 1 teaspoon Dijon mustard (optional)

  • Salt & pepper to taste

  • Parsley or thyme for garnish (optional)

🔪 Instructions:

  1. Cook noodles according to package instructions; drain and set aside.

  2. In a skillet, heat butter/oil over medium heat. Sauté onion and mushrooms until soft.

  3. Add chicken pieces, cook until browned and cooked through. Season with salt and pepper.

  4. Lower heat, stir in sour cream and mustard. Heat gently — don’t boil — until sauce is warmed through and creamy.

  5. Add cooked noodles to the skillet, toss to coat in sauce.

  6. Garnish with parsley or thyme if you like, and serve warm.

  • Swap chicken for leftover rotisserie chicken to save time.

  • Use plain yogurt for a lighter sauce.

  • Add a side of steamed green beans or a simple salad for some veggies.
