It’s well established Southerners have a loose interpretation of the word “salad.” Here’s another example: A tomato cracker salad has no lettuce, but there are plenty of tomato pieces, so a salad we should call it.

A classic Southern tomato cracker salad does taste like a tomato sandwich—because it’s basically tomatoes, salt and pepper, mayonnaise, and “bread” in the form of crackers. It’s creamier and slightly juicier than a tomato salad and a fun addition to a Southern veggie plate.

Ingredients

  • 3/4 cup mayonnaise
  • 3/4 tsp. freshly ground black pepper
  • 1/2 tsp. kosher salt
  • 2 lb. tomatoes, seeded and coarsely chopped
  • 1/2 cup very thinly sliced Vidalia onion, cut into 2-inch lengths
  • 1 sleeve saltine crackers (38 crackers, 4 1/2 oz.), coarsely crushed
  • 2 Tbsp. chopped fresh basil (optional)

Directions

  1. Gather all ingredients.

  2. In a large bowl, stir together mayonnaise, pepper, and salt.

    Stir in tomatoes and onion.

    Gently stir in crackers just before serving. Garnish with basil, if desired. Serve immediately.
