Delicious Meatloaf Cupcakes with Mashed Potato Icing

Ingredients

For the Meatloaf Cupcakes:
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup ketchup
  • 1/4 cup milk
  • egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
For the Topping:
  • Mashed potatoes
  • Steamed vegetables (such as peas and carrots)
  • Gravy (optional)
For Variation:
  • Add shredded cheese to the meatloaf mixture for a cheesy twist.
  • Use ground turkey or chicken instead of beef for a lighter option.
  • Experiment with different seasonings, such as Italian herbs or BBQ sauce, for unique flavor profiles.
  • Swap the mashed potato topping for sweet potato mash or cauliflower mash for a healthier alternative.

Directions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with cupcake liners.
  2. In a large bowl, combine the ground beef, breadcrumbs, ketchup, milk, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until well combined.
  3. Divide the meatloaf mixture evenly among the muffin cups, pressing down gently to form the cupcakes.
  4. Bake for 20-25 minutes, or until the meatloaf cupcakes are cooked through and golden brown on top.
  5. While the meatloaf cupcakes are baking, prepare the mashed potatoes according to your preferred recipe.
  6. Once the meatloaf cupcakes are done, remove them from the oven and let them cool slightly.
  7. To assemble, top each meatloaf cupcake with a dollop of mashed potatoes and decorate with steamed vegetables. Drizzle with gravy, if desired.
