Bermuda Soup Featured In Calgary

A Canadian news publisher recently recommended Bermuda Onion Soup as a means of surviving a cold winter day, with the article providing a recipe and calling the island a “glorious sun-kissed spot.”

The Calgary Sun website said, “It’s around this time of year, when winter still has a firm grip on the county, that many Canadians have dreams of places known for their warmth and hospitality. Restrictions are loosening up, and people are either planning a vacation or dreaming of one.

“The adventurous are looking at spots they’ve perhaps visited before, or put on their bucket list – places like Kentucky, Louisiana, North and South Carolina and West Virginia, to name just a few. Of course, there’s also glorious sun-kissed spots like Bermuda and Puerto Rico to daydream about.

Traditional Bermuda Onion Soup

 

Bermuda was nicknamed The Onion Patch after it began to export crops of mild, sweet onions all over the world – some say the Bermuda onion is so mild you can eat it like an apple. Serves 4. Recipe and photo courtesy TheBermudian.com.

 

8-10 Bermuda onions, (or any sweet onion) finely chopped

 

4 Tbsp. EACH butter and olive or vegetable oil

 

3 Tbsp. flour

 

6 cups good chicken broth, hot

 

Bouquet garni (parsley, thyme, bay leaf, tied together)

 

Freshly ground white pepper to taste

 

3 Tbsp. Gosling’s Black Seal Rum (or any favourite dark rum)

 

3 or more dashes pepper sauce

 

Toasted, or sautéed rounds of day-old crusty French bread, topped with Gruyere or Swiss cheese for garnish.

 

In a pot large enough to contain all ingredients, heat butter and oil and sauté onions until they are just golden. Sprinkle onions with flour and cook another 5 minutes or so, allowing mixture to darken only slightly. Stir in hot broth, taking care to keep soup free of lumps. Season with white pepper, drop in bouquet garni (remove before serving), rum, and simmer for 30 minutes. Add a few generous dashes of pepper sauce just before serving.

Top each bowl with a round of French bead sprinkled liberally with Gruyere cheese and melted under broiler.
