What Is Bourbon Chicken?

Bourbon chicken is a popular dish named after Bourbon Street in New Orleans and for the bourbon whiskey ingredient. If you double the recipe, make sure the chicken is still in a single layer. Laissez les bons temps rouler!

In addition to the bourbon, the marinade also includes brown sugar, soy sauce, minced onion, ground ginger, and garlic powder.

“The flavor of the marinade was incredible,” writes recipe reviewer Allison Blakeman. “I followed the recipe exactly (except I doubled it) and the chicken had that amazing, rich, sticky flavor I associate with bourbon chicken. It tastes better than any other bourbon chicken I’ve had in restaurants; I was dancing around my kitchen.”

Don’t let this boozy entrée turn you away simply because it’s made with bourbon whiskey. The alcohol cooks off in the oven, leaving behind a sweet, nutty flavor. “I’m not a drinker, but did not find the amount of bourbon overpowering,” says recipe reviewer Kathleen. “This will be a regular for us!”

The Key to Perfect Bourbon Chicken

A critical part of this recipe is letting the chicken marinate. The recipe creator lets their chicken marinate in the sauce for about eight hours, so it’s wise to prepare it in the morning. For maximum flavor, let the chicken sit for a full 24 hours.

“I received rave reviews from my dinner guests and had no leftovers,” says recipe reviewer Carol. “Basting every 10-15 minutes provides a flavorful glaze that is exceptional.”

  • 4 skinless, boneless chicken breast halves
  • ½ cup packed brown sugar
  • ½ cup soy sauce
  •  cup bourbon
  • 2 tablespoons dried minced onion
  • 1 teaspoon ground ginger
  • ½ teaspoon garlic powder

Directions

  1. Gather all ingredients.

  2. Place chicken breasts in a single layer in a 9×13-inch baking dish.

  3. Mix together brown sugar, soy sauce, bourbon, dried minced onion, ginger, and garlic powder in a small bowl until well combined; pour over chicken. Cover the dish and marinate in the refrigerator for 8 hours to overnight.

  4. Preheat the oven to 325 degrees F (165 degrees C).

  5. Uncover baking dish and bake chicken with marinade in the preheated oven, basting frequently, until chicken is well browned and juices run clear, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
