Barbara’s Dish (aka Frito Pie)

This is a recipe my mom used to make in the 80s during the summer time, when the Houston heat was at it’s worst.  After speaking with my mom last week, she said our neighbor on their cul de sac made this for block get togethers they used to have.  Anyway, all she called it was ‘Barbara’s Dish’, but it’s really a Frito Pie, with beans.  Don’t poo poo the tomato soup … I’m talkin’ to you, Yaboo 🙂  This is what she wrote down.

Meat Mixture:

  • 1 lb ground beef
  • 1 white onion, chopped
  • Salt and pepper to your taste
  • 1 tsp chili powder
  • 1 can tomato soup
  • ¾ cup water
  • 1 can ranch style beans (don’t drain)


  • Grated Cheese
  • Shredded Lettuce
  • Chopped Tomatoes

Brown beef with the onions, until onions are somewhat translucent, then drain most of the fat.

Then, add salt, pepper and chili powder.

Add the soup, water and beans, stir together.

Simmer on low heat for about 10 mins, until bubbly.  If too thick, add just a little bit of water but not too much.

To Serve:

Put Fritos on plate/bowl, then meat mixture, top with grated cheese, lettuce, and tomatoes.  Or you can add cheese last if you don’t like it melted.   You can add other toppings, like sour cream, black olives, salsa, taco sauce or whatever you like.
