Flavors of the Fifty- New Jersey
New Jersey’s pork roll sandwich
At TNBD, we’re continuing our series featuring a recipe from a different U.S. state every day! Today’s stop is New Jersey, home of the iconic Pork Roll Sandwich.
The Pork Roll Sandwich is a breakfast classic that’s beloved throughout the Garden State. At its core, it features thick slices of pork roll—a cured meat with a slightly smoky, savory flavor—griddled to perfection and served on a soft, fresh roll or bagel. The sandwich is traditionally topped with fried eggs and melted cheese, though many variations include lettuce, tomato, or mustard depending on local preference. The combination of salty, savory pork and gooey cheese with a perfectly cooked egg makes it a hearty and satisfying meal, perfect for starting the day.
Pork roll has a long history in New Jersey. It was invented in 1856 by John Taylor, who developed a spiced, cured pork product designed to be shelf-stable and flavorful. Originally called “Taylor’s Prepared Ham,” it was later renamed “Pork Roll” due to postal regulations prohibiting the word “ham” on packaged meat. Over the decades, Pork Roll became deeply ingrained in New Jersey’s food culture, particularly as a breakfast staple. Regional rivalries even emerged over whether to call it “Pork Roll” (central and northern NJ) or “Taylor Ham” (northern NJ), adding to its local lore.
Today, the Pork Roll Sandwich is more than just a meal—it’s a symbol of New Jersey pride. From roadside diners to home kitchens, it represents a unique culinary tradition that’s been enjoyed for generations. Whether you like it simple with egg and cheese or loaded with extras, a Pork Roll Sandwich offers a true taste of New Jersey heritage in every bite.
