Sunflower Seeds Could Provide the Next Big Meat Alternative

A team of scientists from Brazil and Germany has successfully transformed sunflower seeds into a high-protein, meat-like alternative that could soon compete with plant-based staples like soy and chickpeas.
The collaboration—between Brazil’s Institute of Food Technology (ITAL), the University of Campinas, and Germany’s Fraunhofer IVV Institute—began by extracting oil from the seeds, removing their husks, and filtering out certain phenolic compounds to improve flavor and digestibility. The result was a textured sunflower protein that lead researcher Maria Teresa Bertoldo Pacheco described as having “a very neutral taste and aroma, especially compared to other vegetable proteins on the market,” according to Science Daily.
To test its potential, researchers created two burger prototypes: one made from roasted sunflower flour and another using the new textured sunflower protein. Both were seasoned with tomato powder, spices, and oils before being baked into patties. The textured protein burger stood out for its realistic, meat-like texture and stronger nutritional profile—offering more protein, nearly half the recommended daily iron intake, and healthy amounts of zinc, magnesium, and manganese.
As VegOut noted, removing sunflower oil—since the seeds are roughly 45% fat—leaves behind a defatted “press cake” that’s nearly 50% protein, higher than chickpeas and only slightly below soy. Because sunflowers are not genetically modified and lack common allergens, the new protein could appeal to consumers looking for clean-label, non-GMO food options.
Researchers cautioned, however, that developing the product was not without obstacles. Balancing nutritional value, processing requirements, and taste presented “significant challenges,” the team reported. Still, the breakthrough suggests a sustainable new path for plant-based proteins—one that could make the humble sunflower seed a star ingredient in the future of food innovation.
