Creamy Chicken and Mushroom Stroganoff (for One)

🛒 Ingredients:

1 small chicken breast, cut into bite-sized pieces

½ cup sliced mushrooms (fresh or canned)

¼ small onion, chopped

½ cup sour cream or plain Greek yogurt

½ cup cooked egg noodles or pasta of choice

1 tablespoon butter or oil
-
1 teaspoon Dijon mustard (optional)

Salt & pepper to taste

Parsley or thyme for garnish (optional)
🔪 Instructions:

Cook noodles according to package instructions; drain and set aside.

In a skillet, heat butter/oil over medium heat. Sauté onion and mushrooms until soft.

Add chicken pieces, cook until browned and cooked through. Season with salt and pepper.

Lower heat, stir in sour cream and mustard. Heat gently — don’t boil — until sauce is warmed through and creamy.

Add cooked noodles to the skillet, toss to coat in sauce.
