You’ve had ribs, but have you ever tried Parmesan Corn Ribs? These vegetarian delights are the perfect summer BBQ side – for vegetarians and meat lovers alike! By shaving corn close to the cob, you get perfect little “riblets” – with a blast of spices and a little bit of cheese, these will be the new potluck favorite.
Ingredients
4 ears
Corn
4 Tbsp
Olive Oil
4 Tbsp
Grated Parmesan Cheese
plus extra for garnish
2 tsp
Garlic Powder
1 tsp
Paprika
1 tsp
Salt
1/2 tsp
Ground Black Pepper
1/4 tsp
Cayenne Pepper
to taste
Fresh Cilantro
for garnish
Cooking Instructions

Preheat the oven to 350 degrees F (180 degrees C).

In a small bowl, combine Garlic Powder (2 tsp), Paprika (1 tsp), Salt (1 tsp), Ground Black Pepper (1/2 tsp), Cayenne Pepper (1/4 tsp), and Olive Oil (4 Tbsp).

Use a sharp knife to cut Corn (4 ears) vertically into quarters like riblets.

Brush the ribs with spice oil.
