Country Fried Spam
INGREDIENTS

1 can Spam, cut into 1/4 inch slices

1/4 cup cornstarch

1/2 cup all purpose flour

1 tsp onion powder
-
1/8 tsp cayenne pepper

1/4 tsp fresh ground black pepper

1/2 tsp seasoned salt
-
2 eggs
-
2 dashes hot sauce
-
oil for frying such as vegetable, peanut or canola
-
3-4 cups Whole Milk *optional
DIRECTIONS
- heat 2 inches of oil in heavy frying pan until bubble form around a handle of a wooden spoon.
- mix flour, cornstarch and seasonings together and set aside.
- Whisk eggs and hot sauce together in a separate bowl.
- dredge Spam slices in flour mixture then in eggs then back in flour until covered.
- put into hot oil and fry until golden brown, 2-3 minutes on each side.
- OPTIONAL GRAVY: Remove most of the oli from the pan leaving only a couple tablespoons. Add the leftover flour mixture from dredging the Spam and whisk over medium heat cooking the roux for 3 minutes, slowly whisk in milk and cook until thick. Add milk and cook until it reaches desired consistency. Add more salt and pepper to taste.
- Serve Spam with milk gravy over top if desired.
