Serve this easy ground beef meatloaf recipe with your favorite vegetables, mashed potatoes and bread for a complete comfort food meal. The leftovers make great meatloaf sandwiches!

Ingredients
- 2 slices whole wheat bread
- 2 pounds ground beef
- 2 green onions, chopped
- 2 tablespoons chopped onion
- 1 cup salsa
- 2 tablespoons whole grain mustard
- 1 teaspoon Worcestershire sauce
- 5 – 6 cloves garlic, minced
- 1 tablespoon barbeque sauce or ketchup
Here’s how to make it:
- Put the bread into a small bowl and cover with water. Let it soak for a minute, then drain and put into a large bowl.
- Add the ground beef, green onions, onion, salsa, mustard, Worcestershire sauce and garlic. Season with salt and pepper. Mix with your hands until combined. Form into a loaf in a greased loaf pan.
- Bake in a preheated 375-degree F oven for about 1 hour. Drain off the fat and top with the barbecue sauce. Bake about 15 more minutes.
