Soup weather is here! I have done a potato soup recipe before but this one is a little easier and has less ingredients. These ingredients are things you should have on hand every day. The soup is best made today and served the next day. It does not freeze well, however.
Ingredients
• 1/3 stick of butter
• 1 large onion sliced
• 2 stalks of celery, sliced
• 2 lbs potatoes, peeled and sliced
• 1 tbls salt
• 2 quarts water
• 6 chicken bouillon cubes
• 1/3 cup milk or half & half
• Flour & water paste (3 tbsp. flour & ¼ cup water (or milk)
Directions
• Sauté onion and celery in butter in large pot, just until tender
• Add water, potatoes, salt and bouillon cubes and bring to a boil. Simmer for about 1 hour.
• Add milk and the flour-water mixture to thicken.
