Bye 2023 and hello champagne jello shots! What better way to ring in the start of the new year than with these delicious (and dangerously easy to consume) champagne jello shots. Made with gelatin, lemon juice, sugar, champagne and vodka, these jello shots are perfect for celebrating any occasion!

The recipe for these champagne jello shots couldn’t be easier and the ingredient list is super simple, so there’s really no excuse to not throw these together for your next celebratory soiree. Here’s what you’ll need:

Tips for making the perfect jello shots

Gelatin is one of those magical ingredients that seems like nothing, but give it a few hours and it turns into something totally different! If you’ve never worked were gelatin before it can be a little stressful because you won’t see it coming together until it’s set.

  • Make sure you’re using plain, unflavored gelatin: Flavored gelatin will make these jello shots a totally different flavor and super sweet, so the recipe won’t turn out the same!
  • Don’t let the mixture boil: Be sure to not let the jello mixture boil or you can mess with the jiggly gelatin!
  • Give your jello shots the full time to set: I hate waiting too, but it’s best to give your jello shots a full 3 hours in the fridge to fully set up. Otherwise, you might end up with soupy, not fully set jello shots that will turn into a big mess!

INGREDIENTS

  • 3 cups champagne (or sparkling wine)
  • 1/2 cup granulated sugar
  • 1 Tablespoon lemon juice
  • 4 Tablespoons (4 envelopes) unflavored gelatin
  • 1 cup vodka
  • sprinkles, optional

INSTRUCTIONS

    1. Line an 8 x 8 pan with plastic wrap on all sides*. Set aside.
    2. Combine the champagne, sugar, and lemon in a heavy bottom sauce pan over medium-low heat. Stirring with a whisk, cook until the sugar granules have completely dissolved.
    3. Add the gelatin and whisk. Add in vodka and whisk to combine. Do not let the mixture boil.
    4. Pour the mixture into your prepared pan and place in the fridge for at least 3 hours to set.
    5. If desired, top with sprinkles before slicing into 16 squares and serving!
  1. If you would rather make these jello shots in individual containers, you can also use mini condiment containers or shot glasses!
