The recipe, which has been nicknamed ‘The Soup’, became popularised on a Reddit thread for slow-cooker meals.
Chef and author Peterson said her recipe will have everyone at the table yelling: “That was good!” and Reddit users have shared similar rave reviews in the thread r/slowcooking, which has over three million members.
INGREDIENTS
- 1 onion
- ⅓ cup of flour
- 1 tsp of dried basil
- 2 cloves of garlic or garlic powder
- 2 tbsp tomato paste
- 3 tbsp of olive oil
- 4 cups of chicken broth
- 2 cans of diced tomatoes
- 500g of skinless chicken thighs
- 1 tsp salt
- 1 tsp of pepper
- 4 cups of tortellini
- Several handfuls of spinach (frozen or fresh)
- ½ cup of parmesan cheese
- 1 cup of heavy cream
METHOD
- Add the onions, flour, basil, garlic, tomato paste and a drizzle of oil in a bowl and microwave for 5 minutes, stirring every 90 seconds.
- Add the mixture to the slow cooker.
- Mix the broth, tomatoes, chicken, salt and pepper to the slow cooker too.
- Cover and cook on low for 4-6 hours or high for 3-4 hours.
- Remove the chicken from the cooker and then add in the tortellini, spinach, cheese and cream. Warm the cream before adding to avoid curdling.
- Shred the chicken into bite size pieces and put back into the pot, cooking it on high for 10 minutes or until the tortellini is cooked.
