Few wines have a name as memorable—or as intimidating—as Bull’s Blood.

Known in Hungarian as Egri Bikavér, the famous red blend has been produced for centuries in the historic wine region surrounding the city of Eger in northern Hungary.

Its colorful name comes from one of Hungary’s most enduring legends.

According to tradition, during the 1552 Siege of Eger, a vastly outnumbered Hungarian force held off the invading Ottoman army. Before and during the battle, the defenders reportedly drank generous amounts of the local dark red wine. Seeing the Hungarians fight with extraordinary determination despite overwhelming odds, Turkish soldiers supposedly believed the defenders had mixed the blood of bulls into their wine, giving them supernatural strength.

Whether the story is true is another matter.

Historians generally consider it a legend, but it has helped make Bull’s Blood one of Hungary’s best-known exports.

Modern Egri Bikavér isn’t made from a single grape variety. Instead, it’s a carefully crafted blend that must include several different red grapes. Common varieties include Kékfrankos (Blaufränkisch), Kadarka, Merlot, Cabernet Franc, Cabernet Sauvignon, and Pinot Noir, although the exact recipe varies from one winery to another.

The wine is typically dry, medium- to full-bodied, and known for flavors of dark cherries, blackberries, plums, pepper, spice, and earthy notes. Better-quality bottles are often aged in oak barrels, adding hints of vanilla, tobacco, and leather.

Bull’s Blood pairs especially well with hearty Hungarian cuisine such as goulash, paprikash, grilled meats, smoked sausages, and wild game.

During the Communist era, mass-produced versions of Bull’s Blood flooded export markets, earning the wine a reputation for being inexpensive and often mediocre. Since the 1990s, however, Hungarian winemakers have dramatically improved quality, and premium Egri Bikavér wines are now respected by wine enthusiasts around the world.

Today, Bull’s Blood remains a symbol of Hungarian winemaking and national pride—a wine whose legendary name may be more colorful than its actual history, but whose rich flavor has stood the test of time.
